Line the tin first
An 8-inch square tin, lined with baking paper standing a little above the rim — it makes lifting the whole slab out afterwards easy. Turn the oven on to 170°C now so it is properly hot.

Melt the chocolate with the butter
Set a bowl over a pot of hot water — don't let the bottom of the bowl touch the water. Add the chocolate and the butter and keep stirring until it is smooth, then lift it off and let it come down to warm, not hot.

Beat the eggs and sugar only just together
This is the one that matters most — don't overbeat. Beat too long and you whip air in, the brownies rise, and you have made a cake. We want them chewy, so stop as soon as the sugar has dissolved.

Pour the warm chocolate into the eggs and fold gently with a spatula, round and round, until the colour is even all through the bowl.

Sift in the flour and the cocoa
Actually sift them — cocoa loves to clump. Then fold lightly and stop the moment you can no longer see white flour. A few strokes more and the crumb is already tight.

Bake 25 minutes, and trust the skewer
Pour it into the tin and tap the tin on the table two or three times to knock the big bubbles out. Bake 25 minutes. A skewer should come up with sticky crumbs on it — if it comes out clean, they have been in too long.

Let them cool completely before cutting
This one needs patience — an hour at least, and the colder they are the cleaner they cut. Dip a sharp knife in hot water and wipe it dry between every cut, and you get sharp edges and 16 equal pieces.
